Breakfast of champions

This morning I figured I’d do something crazy and cook breakfast. Usually I stick to something easy – you know, things that you don’t have to get up early to make. Hey! I like my sleep. But it is Saturday and I don’t have to rush out of the house. So why not? I knew I had some eggs, but what else? I really need to go grocery shopping. Desperately. It just seems like the fridge and freezer are full, but nothing really “goes together” enough to make meals.

Breakfast

Many years ago, my mother introduced me to the fine art of refrigerator cooking. I swear that she can pull just about anything out of her fridge and make it taste good. I had stuff that needed to be used, so I figured I’d experiment.

Who knew that a bunch of random junk from the fridge could taste so good?

Here’s what I used:

1 zucchini, chopped.
2 stalks of green onion.
4 pieces of salami. (Yeah, I know, who leaves FOUR pieces of salami in the bag?)
1/8 cup sun-dried tomatoes.
3 large eggs.
1/4 mozzarella cheese
Spices.

Pretty tasty! Made enough for two people.
